Red Kampot pepper is left to ripen fully on the vine. The berries turn a deep red when they reach fully maturity This is key to the flavor. Only the ripest red berries are picked by hand, one by one.
Washing & Boiling : The harvested berries are washed and briefly boiled to clean and prepare them for dry inside the Solar dry tunnel, This drying helps develop their deep red-brown color and intense aroma.
Sorting & Grading: Once dried, the peppercorns are hand-sorted to remove damaged or imperfect ones. Only the best makes it into high-quality Red Kampot Pepper batches.
Best used with soft cheese, on grilled meats or duck, over roasted vegetables, chocolate desserts, in honey or spice syrups.
